INSTRUCTIONS

Prick the potato with a fork on all sides (8 times)

- Roll potatoes in a brine of 1/2 cup water and 2 Tbls salt, just until coated, literally a few seconds.

- Place on a baking sheet with wire rack and place into a 450° oven for 45min. 

- Take out. Make sure internal temp 205°. 

- Coat with vegetable oil and place back into 450° oven for additional 10 min. 

- Remove and instantly cut X into potato to release steam. 

- Serve instantly.
