INGREDIENTS

i 3/4 cup all-purpose flour

1/3 cup brown sugar

1/3 cup sugar

1 tsp baking soda

2 tsp baking powder

1/2 tsp salt

1/3 cup melted butter

1 tsp vanilla

2 ripe bananas mashed

2 medium zucchini grated (about 2 cups) that have been squeezed of

excess water

2 beaten eggs

2 tbls buttermilk (you can use any milk)

1 cup chocolate chips

Banana Zucchini Chocolate Chip Muffins

INSTRUCTIONS

Preheat oven to 350F.

Line a cupcake tin with paper liners.

Mash the bananas and combine with zucchini, set aside. In a medium bowl, add the flour, sugar, soda, baking powder and salt and

stir.

Add the butter, milk, eggs, vanilla, bananas and zucchini, and mix well.

Being very careful not to over mix.

Stir in the chocolate chips, and spoon batter into a greased muffin pan. Add extra chips to the tops of the muffins, if you like, and bake for about 25 minutes, or until tops are firm and golden and a toothpick comes out

clean from the center of the muffins.
