INGREDIENTS

Tortilla Soup olive oil

1 onion

2 red peppers

2 small or 1 large zucchini ( original recipe called for 1 medium but I like a lot of zucchini in m soup)

1 tsp. cumin

1 tsp. poultry seasoning (I didn't have this so I skipped it and it was fine)

1/2 tsp. chili powder

1 1/2 tsp. salt ground pepper

2 cups black beans

2 cups frozen corn

3 cloves garlic

1 28-oz. can stewed tomatoes

1 8-oz. can tomato sauce

2 1/2 cups vegetable broth chicken (optional)

INSTRUCTIONS

Chop onions, peppers and zucchini into 1/2 inch pieces. Dice garlic. Heat olive oil over m heat in soup pan. Toss in onions and saute. After a few minutes, add peppers and zucchi with spices and stir until softened. Add frozen corn and garlic. Once corn is heated (does long), add stewed tomatoes and tomato sauce, black beans and broth. Bring to a boil ar simmer until ready to serve (I usually do about an hour). Add chicken once you start sir if desired Garnish with jack cheese, sour cream, avocado and tortilla chips.
